Cynthia (Cindy) York-Camden MS, RD, LDN Dietitian on the web.
"As a registered dietitian my clients are always asking what nutrition and fitness resources I recommend.  I have a webpage called books by dietitians.  I send my clients and friends there to find books written by dietitians or endorsed by dietitians.  It is a Amazon store so if you purchase a book there it helps to support the website. You are not under any obligation to purchase it on the page.  The most important thing is to use this page to find reliable resources by dietitians - the nutrition experts!! Please visit and share with your friends -thanks"

What's on My Plate - Eating Out

Happy National Nutrition Month.  Today is National What's on MyPlate Day.  Share a picture of your plate to friends and family on your facebook, twitter and blog pages.  Here is a picture of my delicious Salmon Nicoise from the Newell House.  It has all the food groups and so yummy!  Fish two times per week to ensure adequate Omega 3 fatty acids to reduce the risk of heart disease.  Asked for the dressing on the side.  The flavors were wonderful together!  If I made this at home I would use less oil to brown the potatoes and probably make a smaller portion.   Did not feel guilty eating this delicious meal.

Cindy’s Cauliflower and Broccoli Salad

Vegetables:
1 head cauliflower separated into small flowerets
1 bunch broccoli separated into flowerets

1 red onion, chopped
1 cup thinly sliced carrots
1 cup sweet pea pods chopped no strings

Dressing:
1/2 cup low-fat mayonnaise
1/3 cup apple vinegar
1/4 cup sugar or sugar substitute

Mix first six ingredients together in large bowl; combine the dressing ingredients in a small bowl.  Pour dressing over veggies and toss to coat vegetables.
