Here is a quick no bake cookie ball recipe:
NO BAKE SUGAR PLUMS
A delicious, chewy, quick and easy no-bake cookie from Cinnamon Hearts. Children love to make these cookies!
1/2 cup dried apricots
1/4 cup dried figs or dates
1/2 cup chopped pecans
1/4 cup golden raisins
1/4 cup flaked coconut
3 Tbsp orange liqueur or orange juice
1/4 tsp almond flavoring
1/4 cup granulated sugar
In a food processor or by hand, finely chop apricots, pecans, figs or dates, raisins and coconut. Add liqueur or orange juice and almond flavoring. Stir until well blended.
Roll into 36 balls, about 1-inch, by placing a small amount of the mixture between the palms of your hands. Roll each ball in granulated sugar. Layer in an airtight container, placing waxed paper or plastic wrap between each layer to prevent sticking. Store in the refrigerator until ready to serve. Serve on a glass plate lined with a paper doily. Yield: 36 cookies.
Per Cookie: 33 Cal; 1gm Fat; 5gm Carb; 00mg Cholesterol; 1mg Sodium. Exchanges: 1/4 Fruit.

No-Bake Trail Mix Serves 12 Makes 6 cups (1.5 L) Marilyn Small, RD Post Cereals Toronto, ON

Here’s a quick and easy snack to make up and take along for a high-carbohydrate energy boost!
Prepare as needed. Keep in airtight container. Mixture will be less crisp after 1 or 2 days.
Allergy Alert This recipe contains nuts, so check for nut allergies before serving.

4 cups Shreddies, Wheat Chex, Multi-bran Chex, or Multi-Grain Cheerios, 1 L
1 tsp cinnamon 5 mL
1 1/2 cups chopped mixed dried fruit 375 mL
1/2 cup whole almonds, toasted 125 mL
1 cup coconut (optional) 250 mL

1. Combine cereal and cinnamon in large bowl; mix in remaining ingredients.

Nutritional Analysis per ½ cup serving
Calories 153 Protein 3.2 g Fat 3.9 g Carbohydrate 28.3 g Dietary Fiber 3.2 g Sodium 106 mg
Excellent source of thiamin. Good source of iron. Moderate source of dietary fiber.
